I. OBJECTIVE
1. To provide guidelines on opening and closing of walk-in freezer
II. DEFINITION OF TERMS
1. Walk-In Freezer – refers to the main freezer used in the commissary to stock all the perishable goods owned by the company
III. GENERAL POLICIES
The only authorized person to open the walk-in freezer before the start of operation of the commissary is the Commissary OIC (Officer In-Charge). Guard on Duty and the Commissary OIC must log and sign in the logbook the time they open the walk-in freezer. The OIC must keep the padlock for the whole day for the Kitchen Helper to be able to bring the stocks in and out.
At 5pm, the OIC may endorse the padlock to the authorized Commissary Personnel who will close the walk-in freezer. Commissary Personnel must ensure that everything is done. The plastic curtain must be kept in position to prevent mosquitoes and bees from entering, and to prevent the escape of cold air that will otherwise increase the energy consumption.
Each and every personnel who access the walk-in freezer must be monitored by logging in on the security guard’s logbook. Access to the walk-in freezer must be kept at minimal. The OIC must declare the number of times the freezer may be opened in a day and specify the time of each. All other access shall be deemed special and therefore must have an approval from the OIC.
It must be made sure that no one is left inside the freezer before closing it. Guard on Duty must witness the closing of the freezer. Guard on Duty and the Commissary Personnel must log and sign in the logbook the time they close the walk-in freezer.
In the events when the Commissary Personnel is absent, the Supervisors of commissary are obliged to exercise the task.
