III. GENERAL POLICIES

1. INCOMING MATERIALS AND SUPPLIES

1.1 Packaging
• 200 x 340 x 70mc – random sampling
• 145 x 270 x 70mc – random sampling
• 130 x 230 x 70mc – random sampling
• 120 x 145 x 65mc – random sampling

a. Use ruler to check the size of the packaging.
b. Use thickness gauge to check the microns of the plastic.
c. Water Test should be done to at least 1% of the total delivery, or for every 50,000 pieces delivered, at least 50 pieces should be tested.
d. Every delivery must have a Certificate of Compliance.

A. Imported Back Fats
• Brand name – Tonnies, Hallmark, Costa Brava
• Physiological testing – color, aroma, texture, and other physical attribute
• Every delivery must have Certificate of Meat Inspection (COMI). No COMI, no receiving of delivery policy.

B. Mechanical Deboned Chicken or MDM
• Brand name – Proview, Hallmark, Lilly Dale, Tyson
• Physiological testing – color, aroma, texture, and other physical attribute
• Every delivery must have Certificate of Meat Inspection (COMI). No COMI, no receiving of delivery policy.

C. Liquid Raw Materials
• Expiration date
• Batch number
• Unit of measurement (UOM) – liters/bottle, kilo/pack, quantity/box, and kilo/pail.
• Physical attributes of the delivered raw materials such as product information, cleanliness of the container or packaging must be checked.
• All raw materials should be tested accordingly on its pH, moisture and sensory, by the QA Analyst.
• Certificate of Analysis (COA) must be available for industrial suppliers.

D. Powder Raw Materials
• Test for moisture, pH and Organoleptic properties.
• If it is for sweet, savory, and special powder blends for meat processing, Organoleptic Test is needed.
• If it is for BBT, it must be tested by diluting.
a. Royal: 4.3 grams = 50ml water
b. Caramel: 14.33 grams = 50ml water
c. Taro/Choco: 8 grams = 34.3ml water

E. Texturized Vegetable Protein (TVP) – (CHEMMAG)
• Sieve it into the magnet equipment to eliminate impurities such as stones and metals.
• Measure the size of the particles.
• Test for the absorption of the TVP to its maximum.
