III. GENERAL POLICIES

For outlets with at least 2 delivery schedule in a week:
Defrosting of freezer is done during delivery day of products. Since In-Charge of outlet knows the possible time of arrival, he must start to do all the defrosting procedure before the delivery arrives. When the delivery arrives, all newly delivered items are placed first inside the freezer followed by the old stocks for FIFO purposes.

For outlets with only 1 delivery schedule in a week:
Defrosting of freezer is done twice a week. In-Charge must check the inside of freezer if the ice is already thick. This is usually done during lean hours.

New Service Crews are still monitored.

 
How to defrost chest-type freezer:
1. Remove all the food from the freezer.
2. Unplug the freezer and open the freezer door.
3. Open up the drain in the chest freezer, located somewhere near the bottom. Place a pan underneath the drain and check it often to prevent overflowing.
4. Just let the ice in the chest freezer melts into water.
5. Once the freezer is completely free of water, scrub down the inside of the chest with water and rinse thoroughly.
6. Remove any racks contained within the chest freezer and soak them in warm soapy water. After washing them, dry them.
7. Use a towel to dry the inside of the freezer. Place back the racks.
8. Plug in the freezer. Place back the products avoid opening the freezer until it has finished regulating the temperature.
